There are two options for deleting products and variants in Thrive:

Before Deleting, Please Note:
Critical warnings to understand before you delete anything:
โ ๏ธ Deletion cannot be undone! Deleted products cannot be restored to your catalog. If you delete a product by accident, you will need to recreate it from scratch.
Deletion is across all locations: It will also remove the product from any connected integrations (e.g., your POS) and Thrive.
History is preserved: Inventory history and sales history will be preserved in reports. In other words, deleting an item will not affect your history (except for products with Inventory Tracking disabled).
Plan carefully: Plan deletions carefully to ensure no critical inventory data is lost unnecessarily. When in doubt, don't delete!
One-by-one
Deleting the entire Product
Open the product from the Products page
Go to the bottom of the Product Details page
Press the red Delete button
WARNING: This deletes the product and all its variants across all locations.
Deleting Individual Variants from a Product
Steps:
Open the product from the Products page
Go to the Variants & Bundles section
Click on the trash icon next to the variant you'd like to delete
If it's the last variant of a product, we recommend recreating it. A simple product changed to a complex one (with multiple variants or attributes) can only be reverted by recreating it.
Deleting Attributes from a Product
Open the product from the Products page
Go to the Variants & Bundles section
Select the trash can icon from the attribute option you'd like to remove
If you'd like to instead stop using attributes, there is also an option under the Attribute Option list.
Important limitations:
Attributes require at least 1 option. You can't remove the last one
An item with attributes can be converted to an item with variants, but it cannot be converted to a simple product It's best to recreate the product if that is your goal.
In Bulk
Cleaning up multiple products at once using the new Variants View.
Navigate to the Variants View of the Catalog.
Use filters to narrow down which products you want to delete.
Select the items you want to delete.
Select the trash can icon that appears to delete all selected items.
Double-check your selection before deleting!
